What is
a variat?

A variat is Mallorca's own mixed plate: a base of cold Russian salad (ensaladilla) topped with spoonfuls of several hot tapas, usually including meatballs (pilotes), spicy cuttlefish or tripe, often with a croquette on the side. It dates from the 1950s and 60s and you will not find it outside the island.

It is a late-morning meal, the Mallorcan berenar, and many bars stop serving it before lunch. Finish the traditional way with a rebentat, a coffee laced with rum. Ca'n Jordi in the village serves a proper one. Ca'n Jordi
